4 cooked, cubed chicken breasts
¾ cup mayonnaise
2 small cans of pineapple tidbits
1 can water chestnuts drained and chopped
2 cubed apples, sprinkled with lemon juice
2 stalks celery, chopped
1 cup red and green, seedless grapes, halved
Dash of nutmeg
Place chicken in a large pot of lightly salted water and bring to a boil; simmer until tender and cooked through, about 25 minutes. Drain, set aside. When cool enough to handle, chop coarsely, and place into a larger bowl.
Stir in ¾ cup of mayonnaise. Then add pineapple tidbits, including juice.Add water chestnuts, cubed apples, celery and grapes. Stir gently. Top with dash of nutmeg.
