Try this easy guacamole dip with your favorite veggies instead of traditional chips.
1 lemon, juiced
2 T chopped cilantro (optional)
1 small tomato
1 jalapeno, seeds and ribs removed
1 green bell pepper
1 small white onion
Salt and pepper to taste
Mash avocado and lemon juice with a fork until fluffy and creamy. Finely chop cilantro, tomato, peppers and onion. Mix all ingredients well and season with salt and pepper. Allow to rest about an hour before serving so the flavors mix well.
Serve with carrots, celery and cucumber slices.
